Filter your customers.’ This is clearly the most valuable bit of advice received by artist Fabrice Domercq, since he quoted it to me each time we met recently – once at a tasting of his no-additive wines organised by their UK importer Dynamic Vines (see above) and then at a subsequent meeting I arranged because I was so intrigued by his story and its relevance to Bordeaux’s current crisis whereby all but the top layer of châteaux are running at a loss because demand for basic bordeaux has fallen to such an extent. The French government recently agreed to pay growers to distill surplus wine into alcohol and to pull out vines in uneconomic locations.</i></b><br />

Generally speaking, before 2021, the country’s wine law classified its PDO (protected designations of origin) wines into two fundamental levels: Qualitätswein and Prädikatswein, the latter of which further subdivides into six categories depending on sweetness level. These levels provide a good indication of style for consumers perusing bottles on the shelf. However, they don’t reveal quality, which is where the VDP wine classification system comes in. Since its inception in 1910, the VDP has been defining the quality of wine according to origin — essentially, classifying vineyards by identifying micro-terroir.</i></b> <br />
